Ingredients

  • 1 large stewed cucumber (s)
  • 400 g beans, reen
  • 2 stalks savory
  • 50 g soy ranules
  • 180 ml water
  • 2 tablespoon soy sauce
  • some smoked salt
  • Chilli flakes
  • pepper
  • 400 g tomatoes, passed
  • 1 large onion (s)
  • 2 cloves garlic
  • 10 ml virgin olive oil
  • some parsley, chopped

Instructions

  1. Heat 180 ml of water and soy sauce together, add the soy granules and bring to the boil, remove from the fire and set aside to soak for about 30 minutes. Season to taste with smoked salt and pepper.
  2. Peel and core the cucumber, cut into cubes and do not cook completely in a little salted water, this takes about 6 minutes. Drain.
  3. Cut off the ends of the beans, remove any threads, cut into pieces and cook in salted water with the savory until firm to the bite. Depending on the type of bean, takes 20-30 minutes. Drain.
  4. Peel onion and garlic and chop finely. Heat the oil in a saucepan and fry both in it. You shouldn`t take paint. Now add the prepared soy granulate mass including the remaining liquid and the tomatoes. Bring to the boil and simmer for another 5 minutes with the lid slightly open. Now add the cucumber and beans and bring to the boil again.
  5. Put in plates or bowls and garnish with parsley.
  6. The cucumber stew tastes hot and cold.
