Ingredients

  • 200 g couscous
  • 1 small cucumber (s)
  • 1 red pepper (s)
  • 4 tomato (s)
  • 0.5 ½ bunch spring onion (s)
  • 0.5 ½ bunch mint
  • 300 g cheese, (Leerdamer)

For the dressing:

  • 150 g natural yourt
  • 2 tablespoon olive oil
  • 1 tablespoon lime juice
  • 0.75 teaspoon ¾ cumin
  • salt and pepper
  • sugar
  • possibly parsley
  • possibly grilled chicken breast, cut into strips

Instructions

  1. Prepare the couscous according to the package recommendations. After the cucumber has been cleaned, washed and cut in half lengthways, remove the seeds and then cut into slices. Remove the stalk from the washed tomatoes, core and dice. Wash the spring onions and cut into rings.
  2. Also wash the cleaned mint and roughly chop it. Dice the Leerdammer and mix well with the other ingredients.
  3. For the dressing, mix yogurt with oil and lime juice well. Season to taste with cumin, salt, pepper and sugar. Pour the dressing over the salad as a topping just before serving.
  4. Tip: Instead of the mint, you can also prepare the salad with chopped parsley.
  5. Also very tasty: Serve garnished with grilled chicken breast in strips, but then it is not vegetarian.
