Ingredients

  • 2 melon (s), ripe, e.g. net melon, honeydew melon, watermelon (half them)
  • 1 large cucumber (s)
  • 3 stalks mint
  • 2 dashes olive oil
  • 1 dash white wine vinegar or a little lime juice
  • 4 tablespoon pine nuts
  • salt and pepper

Instructions

  1. Toast the pine nuts in a pan without oil until golden.
  2. Halve the melons, remove the stones and cut out the flesh with a ball cutter. If you don`t have a ball cutter, you can of course also dice the melon.
  3. Wash the cucumber thoroughly, if you don`t like the peel, you can also cut out or dice balls with the ball cutter.
  4. Wash the mint and cut into fine strips. Mix the fruit and cucumber balls with the mint, season with a little pepper and a pinch of salt. Add vinegar or lime juice and finally add the oil. Mix everything well again, season to taste and refrigerate.
  5. Serving: Put the chilled cucumber and melon salad in a glass and sprinkle the pine nuts over it.
