Ingredients

  • 1 cucumber (s), or 3-4 smaller farmer cucumbers
  • 500 g strawberries
  • 1 handful basil
  • 1 lemon (s), juice it
  • some honey, or sugar or maple syrup, depending on your taste
  • 2 tablespoon oil (walnut or pistachio oil)
  • Salt and pepper, black

Instructions

  1. Peel the cucumber, or with small farm cucumbers or organic cucumbers, you can also leave the skin on. Then quarter the cucumber and remove the seeds, then cut into small pieces.
  2. Wash, clean, quarter or cut the strawberries into small pieces. Add to the cucumber, lightly salt and pepper. Cut the basil leaves into strips and add them as well.
  3. Make a marinade from the lemon juice, 1-2 tablespoons of water, honey (or sugar, stevia or maple syrup - depending on your taste) and the oil and pour over the salad, mix well and let it steep for a moment.
  4. Goes well with fried chicken.
