Ingredients

  • 1 cucumber (s), lean, organic
  • 1 tablespoon rice vinegar
  • 1 teaspoon ginger, peeled, grated, amount to taste
  • 1 clove garlic
  • a bit salt
  • 1 spring onion (s)
  • 1 tablespoon mint leaves, cut into strips
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • Chilli flakes
  • pepper
  • 1 ½ tablespoon sesame oil, light
  • some sesame oil, dark
  • 0.5 tablespoon ½ sesame, roasted

Instructions

  1. Rinse the cucumber, dry it and cut it into long strips with the spiral cutter. Clean and wash the spring onions and cut into thin rings. Peel and dice the garlic clove and mash it with a little salt.
  2. For the marinade, stir together rice vinegar, ginger, garlic, soy sauce, sugar, chilli flakes and pepper. Withdraw light and dark sesame oil.
  3. Mix the cucumber strips, spring onions and mint with the marinade, let stand for ten minutes and season to taste. Serve sprinkled with sesame seeds.
