Ingredients

  • 1 thick cucumber (s)
  • 2 small onions, diced
  • 5 tablespoon olive oil, for simmering
  • 4 tablespoon apricot jam
  • 1 small lemon (s), squeezed
  • Salt and pepper, from the mill
  • Chilli, dried, from the mill

Instructions

  1. Sweat the onion cubes in olive oil until translucent. Then add the apricot jam and lemon juice. Season properly with salt, pepper and chilli and leave to cool.
  2. In the meantime, peel the cucumber and cut into small cubes. Then stir in the onion mix and let everything stand in the refrigerator for about 1 hour.
