Ingredients

  • 1 large cucumber (s)
  • 250 g cherry tomato (s)
  • 1 medium onion (s)
  • 1 tablespoon oil
  • 0.5 ½ bunch parsley, smooth
  • 0.5 ½ bunch chives
  • 2 sprigs oregano or marjoram
  • 2 sprigs thyme
  • salt
  • Pepper from the grinder

Instructions

  1. Halve the cucumber and scrape out the seeds with a spoon. Cut the halves into strips and then into cubes. Halve or quarter the cocktail tomatoes depending on their size.
  2. Cut the onion into fine cubes. Cut the chives into rolls with the scissors, finely chop the other herbs individually.
  3. Now sauté the onion in oil over a moderate heat. When it is golden yellow, add the cucumber pieces, thyme and oregano, season with salt and pepper and simmer the cucumber for a few minutes until soft. You should still have some bite at the end of the cooking time. Now add tomatoes, chives and parsley. Let everything warm up again, season to taste and serve.
  4. A herb rice, for example, goes well with it.
