Instructions

  1. Beat the eggs per serving in a cup. Season with a little olive oil, salt, pepper and oregano or spices of your choice and beat with a fork.
  2. Pluck the washed spinach and add. Core the tomato and stir in diced. Fold in other ingredients, such as ham or mushrooms, if desired.
  3. Stir the contents of the cup with a fork until well mixed. Put the cup in the microwave on the highest setting for 1.5 - 2 minutes.
  4. Served with bread, this recipe makes a quick and easy breakfast.
