Instructions
Prepare the ingredients for the raisin curd cake. Turn on the oven to warm up to a temperature of 170-180 ° C.
Transfer the raisins to a deep bowl and cover with warm water. Leave it on for 5-10 minutes.
Drain the water, and dry the raisins on paper towels.
Cottage cheese, if it is grainy, rub through a sieve or punch until smooth with an immersion blender.
Combine soft butter in a bowl with sugar, vanilla sugar and a pinch of salt.
Whisk for a few minutes.
Add the curd and continue to beat for another 3-4 minutes.
Then add eggs one at a time. After each added egg, beat the dough thoroughly until smooth.
Add flour, baking powder, baking soda, and dried raisins.
Stir until a smooth and thick cake batter is obtained.
Line a baking dish (mine is 23×13 cm) with baking paper or brush with a thin layer of butter and sprinkle with flour. Pour the dough into a mold and smooth the surface. Send the cake to the preheated oven and bake at 170-180 ° C for about 50-60 minutes.
Check the readiness of the cake with a wooden skewer: it should come out of the center of the finished cake dry, without traces of batter. Place the cake on a wire rack and let cool completely.
Delicate curd cake with raisins is ready. Sprinkle with powdered sugar if desired.
