Curd Cake with Raisins

An easy-to-prepare curd cake with raisins turns out to be very tender, with a creamy note in the aftertaste. A sweet tooth will definitely not resist such a treat!

Ingredients

  • Cottage cheese – 180 g
  • Raisins – 50 g
  • Butter (soft) – 70 g + for greasing the mold
  • Eggs – 2 pcs.
  • Sugar – 150 g
  • Flour – 150 g (1 glass with a capacity of 250 ml) + for blasting the mold
  • Soda – 0.25 teaspoon
  • Baking powder – 1 teaspoon
  • Vanilla sugar – 1 teaspoon
  • Salt – a pinch

Directions

  1. Prepare the ingredients for the raisin curd cake.
    Turn on the oven to warm up to a temperature of 170-180 ° C.
  2. Transfer the raisins to a deep bowl and cover with warm water. Leave it on for 5-10 minutes.
  3. Drain the water, and dry the raisins on paper towels.
  4. Cottage cheese, if it is grainy, rub through a sieve or punch until smooth with an immersion blender.
  5. Combine soft butter in a bowl with sugar, vanilla sugar and a pinch of salt.
  6. Whisk for a few minutes.
  7. Add the curd and continue to beat for another 3-4 minutes.
  8. Then add eggs one at a time. After each added egg, beat the dough thoroughly until smooth.
  9. Add flour, baking powder, baking soda, and dried raisins.
  10. Stir until a smooth and thick cake batter is obtained.
  11. Line a baking dish (mine is 23×13 cm) with baking paper or brush with a thin layer of butter and sprinkle with flour. Pour the dough into a mold and smooth the surface. Send the cake to the preheated oven and bake at 170-180 ° C for about 50-60 minutes.
  12. Check the readiness of the cake with a wooden skewer: it should come out of the center of the finished cake dry, without traces of batter. Place the cake on a wire rack and let cool completely.
  13. Delicate curd cake with raisins is ready. Sprinkle with powdered sugar if desired.
