Ingredients

  • 50 g raisins
  • 3 egg (s)
  • 200 ml milk
  • 1 packet vanilla sugar
  • 100 g flour
  • 250 g low-fat quark (curd cheese)
  • 4 teaspoons butter
  • 3 tablespoon sugar
  • 1 tablespoon lemon juice
  • 100 g whipped cream
  • salt
  • possibly mint and powdered sugar to decorate

Instructions

  1. Soak the raisins in water. Separate 1 egg, set the yolks aside. Whisk the egg white, 2 eggs and milk together. Add a pinch of salt, vanilla sugar and flour and stir everything into a smooth dough. Let it soak for about 10 minutes.
  2. Heat 4 teaspoons of butter one after the other in a small non-stick pan (approx. 24 cm) and bake 4 pancakes from the batter.
  3. Mix the quark with 2-3 tablespoons of sugar, the remaining egg yolk and lemon juice. Drain the raisins well and fold in.
  4. Spread the quark cream on the pancakes, roll them up, cut in half if necessary and place them next to each other in a small, greased casserole dish. Mix the cream with 1 tablespoon of sugar and pour over it. Bake in a preheated oven (175 ° C, fan oven 150 ° C, gas: level 2) for 10 - 12 minutes.
  5. Serve garnished with mint and powdered sugar.
