Ingredients

  • 1 onion (s)
  • 2 garlic clove (s), pressed
  • 2 tablespoon butter
  • 2 apples, sour, peeled and diced
  • 160 g rice (risotto rice)
  • 2 teaspoons flour
  • 1 tablespoon curry
  • 2 ½ dl white wine
  • 1 liter broth
  • 300 g turkey meat, sliced
  • 2 dl crème fraîche
  • salt and pepper

Instructions

  1. Sweat the onion and garlic in butter. Add apple pieces and sauté briefly. Add the rice and dust with flour and curry. Deglaze with the white wine and pour on the bouillon. Let simmer for about 20 minutes.
  2. Salt and pepper the turkey meat and dust with a little flour. Fry well! Add the shredded meat and crème fraiche to the soup and bring to the boil again.
  3. Variation: instead of apples, potatoes can also be used
  4. 4 servings as a main course
  5. approx. 10 servings as a starter
