Ingredients

  • 1 chicken (soup chicken)
  • 1 bunch of soup greens
  • 1 bay leaf
  • 2 chicken breasts
  • 2 onions
  • 50 grams of flour
  • 4 tablespoons curry
  • 1 tablespoon curry paste, red
  • 1 can of coconut milk
  • 6 tablespoons almonds (flakes)

Instructions

  1. Clean, wash and roughly chop the soup greens. Wash the soup chicken and simmer everything in 2 liters of boiling water for at least 90 minutes. Sieve the broth.
  2. Dice the onion and sauté in a little oil. Sweat the flour and curry powder and paste briefly. Add the stock and let it boil briefly. Add coconut milk. Cut the chicken breast fillets into strips and fry them until they get some color. Add to the soup and season with salt and pepper. Roast the almonds without fat.
  3. Serve the soup with almonds.
