Ingredients

  • 300 g flour mix dark from Schär
  • 100 g millet flakes
  • 100 g rice flakes
  • 100 g tier nut flakes (Chufa)
  • 2 teaspoons salt
  • 1 tablespoon guar gum
  • 1 cube yeast, fresh
  • 1 tablespoon vinegar, (fruit vinegar)
  • 1 tablespoon beet syrup
  • 800 ml buttermilk

Instructions

  1. Mix the flour with the flakes, add the salt and guacese flour. Make a well in the middle and crumble the yeast into it. Pour the beet syrup on the yeast, add the vinegar to the side on the edge. Now add the lukewarm buttermilk and mix everything together well, the dough has a mushy consistency.
  2. Pour the whole thing into a greased loaf pan and smooth it out with a wet spoon. Cover with a cloth and leave to stand. until it almost doubled.
  3. Now slide it into the oven preheated to 200 degrees and spray plenty of water into the oven.
  4. After 30 minutes turn down to 180 degrees and then bake for another 20 minutes.
  5. A tip: I also add 2 tablespoons of sunflower seeds or pumpkin seeds.
