Ingredients
For the pre-dough:
- 150 g flour (Gofio de mezcla Millo y Trio)
- 10 g yeast
- 230 g water, lukewarm
For the dough:
- 350 g wheat flour type 550
- 140 g water, lukewarm
- Dissolve 10 g yeast in the water
- 10 g salt
- 20 g olive oil
- 1 teaspoon honey

- Process the ingredients for the pre-dough into a smooth dough and let stand covered for 30 minutes.
- For the main dough, knead all the ingredients with the pre-dough well with the spiral mixer of the food processor for 10 minutes on level two. Put the dough in an oiled bowl and cover it for 60 minutes. Work up in the 20th and 40th minute using the stretch and fold method. Then divide it into 10 parts of equal weight, grind and shape them to your liking. Let rise covered for 30 minutes.
