Delicate Cheese Cakes

In the recipe you will find the secrets of making very tender curd cakes with raisins. The peculiarity of these cheesecakes is that they are prepared practically without adding flour or semolina, a little flour is used only for breading the cheesecakes.

Ingredients

  • Cottage cheese – 250 g
  • Raisins – 50 g
  • Egg- 1 pc.
  • Sugar – 1-2 tbsp (to taste)
  • Vanilla sugar – 1 teaspoon
  • Salt – 1 pinch
  • Flour (for breading) – 4-5 tbsp
  • Vegetable oil (for frying) – 2-3 tbsp
  • Sour cream (for serving) – to taste
  • Jam or jam (for serving) – to taste

Directions

  1. Cottage cheese must be grated through a sieve. Then grind the cottage cheese with sugar, salt and vanilla sugar until smooth. Divide the egg into white and yolk. Add the yolk to the curd, mix.
  2. Rinse the raisins well under hot water, dry (or soak in warm water for 20 minutes). Add the raisins to the curd mass, mix. In a separate bowl, beat the egg white until fluffy. Add the whipped protein to the curd mass. Gently stir the protein with the curd in a circular motion.
  3. Form cheese cakes. To do this, pour flour on a flat plate and spoon 1/5 of the curd mass on it with a spoon. Sprinkle flour on top, roll a ball with your hands and slightly flatten it into a disk. Make 4 more cheesecakes from the remaining curd mass and flour. Heat oil well in a skillet, reduce heat to medium. Put the cheese cakes in a frying pan and fry on both sides until golden brown, about 2-3 minutes each. Delicious, very tender cheesecakes are ready. Serve cheesecakes with sour cream and jam.
