  • 1 onion (s)
  • 1 clove garlic
  • 1 tablespoon butter
  • 500 g potato (s)
  • 400 g carrot (s)
  • 500 ml vegetable stock
  • 1 cup cream
  • 300 ml milk
  • parsley
  • salt and pepper

Instructions

  1. Peel the potatoes and carrots and slice or cut them into equally sized slices. Cut the onion and garlic into cubes.
  2. Sweat the onion with the garlic in the butter. Then add the potatoes and carrots and sweat for a moment. Deglaze with vegetable stock, cream and milk. Bring the whole thing to the boil again and then simmer for 20 minutes at a low temperature.
  3. Now puree the whole thing. Finally, season the soup with parsley, salt and pepper.
  4. Tip: You can also fry bacon. To make it even lower in fat, prepare completely with milk instead of cream.
