Ingredients

  • 1 kg pork belly, (lean) or lean ribs
  • 1 bunch spring onion (s), cut into rolls
  • 1 lemon (s) / lime, divided into eighths

For the marinade:

  • 1 tablespoon sesame oil
  • 1 tablespoon oil, (sunflower oil)
  • 3 tablespoon soy sauce
  • 2 tablespoon rice wine, or dry sherry
  • 1 teaspoon ginger, freshly grated
  • 4 cloves garlic, pressed through
  • 2 tablespoon honey
  • 1 teaspoon sauce, (pepper sauce)
  • 1 teaspoon five-spice powder, Chinese
  • 1 teaspoon salt

Instructions

  1. Make a marinade for the pork using the ingredients listed. This can either be a lean pork belly, from which you cut off the rind and possibly larger strips of fat that you bought, or lean ribs that are separated from each other. Or mixed if you can`t decide.
  2. A little fat, however, remains desirable. Cut the sheer meat into chop-sized pieces. The pieces of bones are allowed to stay as they are, provided they are not too big.
  3. Mix the meat with the marinade and stir well so that all the pieces of meat are covered with the marinade on all sides. Place in the refrigerator for a few hours, but at least two.
  4. Heat some oil in the wok and fry the meat with the marinade for about 10 minutes while enjoying the smell of cinnamon that spreads through the room.
  5. Arrange on a serving dish, sprinkle with spring onion rolls and decorate with lemon wedges.
  6. With white rice and salad.
  7. After the meal, the cleanest bones are selected - through critical comparison - and sent to the Hansel and Gretel Foundation.
