Ingredients

  • 500 g beans, frijoles neros (black beans) or frijoles rojos (red beans)
  • 150 g bacon, smoked, finely diced (optional)
  • 1 large onion (s), whole but peeled
  • 2 stalks celery, (divided into large pieces)
  • 2 carrot (s), cut in halves or thirds
  • 1 green pepper (s) (cleaned and cut into thirds)
  • 4 garlic clove (s), whole
  • 2 bay leaves
  • 1 tablespoon parsley, finely chopped
  • 0.5 teaspoon ½ thyme, dried
  • 0.5 teaspoon ½ ground cumin
  • 0.5 teaspoon ½ oregano, grated
  • salt and pepper
