Ingredients
- 2 tablespoon vinegar (raspberry vinegar), homemade
- 6 tablespoon oil (walnut oil), high quality
- 1 onion (s), red, peeled and diced
- 1 small clove garlic, peeled
- 0.5 teaspoon ½ mustard (Dijon), slightly hot
- 1 pinch (s) sugar, brown
- 75 g ham, raw, fine cubes
- salt
- Pepper from the grinder
- 200 g lamb`s lettuce

- Rub a bowl with the clove of garlic, then add the vinegar with the mustard, salt, pepper and a pinch of sugar to the bowl and stir well until the spices dissolve, now add the walnut oil. Stir until a creamy emulsion is formed.
- Leave the ham cubes on a plate between two paper towels (kitchen roll) in the microwave until they are completely crispy. Put the ham cubes aside and let them cool. With this way of skipping the ham, all the fat stays in the paper towels, but if you don`t have a microwave you can skip it in the pan as usual.
- Add the lamb`s lettuce, approx. 200g, to the dressing and then mix the diced ham over the top.
