Ingredients

  • duck breast 2 pcs.
  • olive oil 1 tablespoon
  • apples 2 pcs.
  • butter 2 tablespoons
  • apple juice 100 ml
  • orange juice 50 ml
  • starch 2 tsp
  • brown sugar 2 tsp
  • cider 75 ml

Instructions

  1. Wash breasts, make incisions on the skin. Drizzle with olive oil, salt, and pepper.
  2. Wrap in foil skin side down and marinate for 30 minutes. Bake for about an hour at 200 ° C. 10 minutes before ready, unfold the foil and allow the duck to fry.
  3. While the duck is baking, prepare the sauce and caramelized apples. To do this, cut the apples into medium slices and simmer in butter. Sprinkle with brown sugar and caramelize for about 5 minutes. Transfer the finished apples to a plate.
  4. Pour the cider into the pan where the apples were cooked and leave the alcohol to evaporate over low heat. Dissolve the starch in apple juice and pour into a frying pan, stir, thicken and add orange juice. Season with salt and pepper to taste.
