  • Water – 125 ml
  • Butter – 100 g
  • Sugar – 10 g
  • Salt – a pinch
  • Flour – 150 g
  • Eggs – 4-5 pcs.
  • Cinnamon – a pinch
  • Milk – 600 ml
  • Sugar – 1 tbsp
  • Semolina – 1.5 tbsp
  • Vanilla sugar – 10 g
  • Cinnamon – a pinch
  • Egg – 1 pc.

  1. First, you need to prepare the choux pastry. Pour milk into a saucepan, add vanilla sugar, cinnamon and bring mixture to a boil.
  2. Add all the flour in one fell swoop and stir all the ingredients.
  3. Once the mixture is smooth, put the saucepan back on the fire. While stirring, boil the dough for another 10 seconds so that a film appears on the bottom.
  4. After removing the dough from heat, add 4-5 eggs gradually. Beat quickly with a mixer to prevent the eggs from curdling.
  5. Using a pastry bag, place 5 cm long ribbons on the parchment. Send the eclairs to the oven at 200 degrees for 10 minutes. Bake the choux pastry for the next 10 minutes at 180 degrees.

  6. While the eclairs are baking, prepare the cinnamon custard. To do this, pour milk into a saucepan, bring to a boil, add vanilla sugar, sugar, cinnamon, beaten egg, and semolina.
  7. Cook the cream, stirring quickly until bubbles form on the surface.
  8. Once the cream is ready, add the butter. Stir until the butter is melted.
  9. Cool the cream.
  10. Stuff the finished cinnamon eclairs with cream.
