Egg & Bacon Snack Cupcakes

Bright and mouth-watering kefir cupcakes are perfect for home gatherings. These muffins contain only the tastiest: crispy bacon, salty cheese, eggs and aromatic green onions.

Ingredients

  • Kefir – 120 ml
  • Sour cream with a fat content of 10-15% – 120 g
  • Chicken egg – 1 pc.
  • Vegetable oil – 2 tbsp
  • Flour – 160 g
  • Baking powder – 1 teaspoon
  • Salt – ½ teaspoon

For filling:

  • Quail eggs – 8 pcs.
  • Hard cheese – 100 g
  • Bacon – 5-6 strips
  • Green onion – 6-7 feathers

Directions

  1. Prepare all the ingredients for the egg, bacon, cheese, and green onion snack muffins.
  2. For the filling, boil the quail eggs hard-boiled (about five minutes) and peel them.
  3. Cut the bacon into strips, so it will be easier and faster to fry it.
  4. Fry the bacon in a dry skillet.
  5. Place the bacon on a paper towel to absorb the excess fat.
  6. Grate cheese on a coarse grater.
  7. Rinse green onions, dry well and chop finely.
  8. For the dough, combine kefir, vegetable oil, sour cream and a chicken egg in a large bowl. Stir until smooth.
  9. Sift flour and mix with salt and baking powder. Gradually add the flour mixture to the liquid ingredients and mix until the ingredients are combined.
  10. At the end, gently stir in the bacon, cheese and green onions. Save some bacon and onions for decorating your snack muffins.
  11. Preheat oven to 180 degrees. Prepare muffin tins: grease them with vegetable oil or insert paper capsules for baking. Fill the prepared forms with about a third of the dough. Place one quail egg in the center of each mold.
  12. Cover the eggs with the remaining dough, filling the molds almost to the brim.
  13. Top with bacon for garnish.
  14. Bake savory muffins on kefir in a preheated oven at 180 degrees for 25-30 minutes (always be guided by your oven). Check the readiness of the cupcakes with a match or a wooden skewer.
  15. Cool ready-made snack muffins with egg, bacon, cheese and chives and can be served garnished with chopped green onions. Bon Appetit!
