- Cut the cocktail tomatoes into small cubes and the spring onions into small rings. Line a muffin tin with a slice of Serrano ham and add one egg, whisked or whole. Season this with pepper.
- Add the chopped tomatoes and spring onions. If necessary, the egg mass can be sprinkled with cheese. Bake in the oven at 180 degrees for 15 minutes.
- The recipe makes 4 muffins.
