Ingredients

  • 4 sheets gelatine, white
  • 2 egg (s)
  • 1 tablespoon sugar
  • 1 packet vanilla sugar
  • 100 ml egg liqueur
  • 100 g whipped cream
  • 100 ml grape juice, red
  • 1 teaspoon cornstarch
  • 2 teaspoons sugar
  • 150 g berries, mixed, frozen
  • 30 g dark chocolate

Instructions

  1. Soak the gelatine in cold water. Separate the eggs. Mix the egg yolks with 1 tablespoon of sugar and vanilla sugar until creamy. Stir in egg liqueur up to 4 teaspoons. Squeeze out the gelatine and dissolve in a saucepan over a mild heat. First stir in 2 tablespoon of the egg mixture, then stir into the rest of the mixture. Chill until it starts to gel.
  2. Beat the egg white and cream separately until very stiff. First fold the egg whites and then the cream into the egg liqueur mass. Cover and chill the mousse for at least 4 hours, preferably overnight.
  3. Mix 2 tablespoons of the grape juice, cornstarch and 2 teaspoons of sugar until smooth. Bring the rest of the juice to the boil in a saucepan and thicken with the starch. Fold in the frozen berries. Let cool down.
  4. Chop the chocolate. Divide the mousse on 4 dessert plates. Serve with chocolate, berries and the rest of the liqueur.
