Eggplant Casserole and Minced Pasta

For eggplant and pasta lovers, this casserole is perfect. Pasta with minced meat, cheese, and tomato sauce is hidden under thin strips of grilled eggplants. A very tasty dish for a family dinner.

Ingredients

  • Eggplant (medium size) – 2-3 pcs. (500 g)
  • Combined minced meat (pork and beef) – 300 g
  • Pasta – 200 g
  • Bulb onions – 1/2 pc.
  • Hard cheese – 100 g
  • Egg – 1 pc.
  • Fresh dill – 3-4 branches
  • Tomato ketchup – 3 tbsp
  • Vegetable oil – 3-4 tbsp
  • Salt – 1 teaspoon
  • Ground black pepper – to taste

Directions

  1. Wash the eggplants, cut off the stalks. Cut the eggplants into thin (about 2-3 mm) strips. Salt the eggplants and leave for 10-15 minutes to let the liquid stand out. Then shake the liquid out of the eggplant strips.
  2. Fry the eggplants in a grill pan for 1-2 minutes on each side.
  3. Leave the fried eggplant for a while while you work on the rest of the ingredients.
  4. Boil pasta in boiling salted water until al dente, i.e. not boiling until cooked for 1-2 minutes. Usually, the cooking time is indicated on the packaging of pasta. I cooked for 8 minutes.
  5. Throw the finished pasta in a colander and let the liquid drain. Cool the pasta.
  6. Coarsely chop the onions (in quarters) and fry in vegetable oil until soft, about 3-5 minutes.
    Transfer the fried onions to a plate, leaving the oil in the skillet.
  7. Put the minced meat in the same pan and fry for about 10-12 minutes, breaking the lumps with a wooden spoon. Add salt and black pepper. Stir. Let the minced meat cool.
  8. Put the cooled pasta, fried onions into a deep bowl beat in a chicken egg. Add chopped dill and coarsely grated hard cheese.
  9. Send the fried minced meat, salt, and black pepper there. Stir. Add tomato sauce or ketchup.
  10. Turn on the oven to heat up to 180 degrees. Place the fried eggplant strips slightly overlapping in an ovenproof dish in a circle. Fill the eggplant pan with minced meat, cheese, and ketchup pasta and press down lightly with the back of a spoon.
  11. Bake the pasta, minced meat, and eggplant in the oven for about 20 minutes.
  12. Remove the eggplant and minced pasta casserole from the oven and let sit for another 20 minutes. Then cover the casserole dish with a wide, larger dish. Turn the baking dish over and place the casserole on a platter.
  13. Garnish the casserole with fresh herbs – dill, parsley, or basil go well with eggplant and pasta.
  14. Use a sharp knife to cut the casserole into portions, like a pie, and serve warm. Pasta with minced meat, tender cheese, fresh herbs, and juicy eggplants – this is very satisfying and tasty!
