Eggplant Sandwiches

A simple sandwich can be made very tasty, the main thing is to know the secret. I suggest you make hot eggplant and cheese sandwiches. And the secret of this dish is that eggplant fried in butter tastes like meat!

Ingredients
- Bread – 4 slices
- Eggplant – 1 pc. (average)
- Hard cheese – 50 g
- Garlic – 1 clove (optional)
- Egg – 1 pc.
- Water – 1 tablespoon
- Salt – 0.5 teaspoon
- Butter – 50 g
For decoration:
- Cherry tomatoes – 2 pcs.
- Parsley greens – 5 g
Directions
- Cut the eggplant into slices lengthwise, the slices of eggplant should be the same size as the slices of bread. Salt the eggplants and leave them in salt for 5-7 minutes, they will let the juice out.
- We squeeze the eggplant plates from the liquid and fry them in a pan in butter for 2-3 minutes on each side.
- Cut the bread into portions.
- In a bowl, beat the egg with 1 tablespoon. a spoon of water. Dip each piece of bread on both sides in an egg mixture.
- Fry the bread in the same oil in which we fried the eggplants.
- Since further, the cooking process will take place in the microwave, I put the bread with eggplant on the microwave stand.
- Rub the cheese on a medium grater and add the garlic clove passed through a press to it. Mix cheese and garlic well.
- We spread the cheese mass on top of the eggplant. We send the sandwiches to the microwave for about 40 seconds to melt the cheese.
- Decorate ready-made sandwiches with eggplant and cheese with cherry tomatoes, fresh parsley, and serve.
