- 1 eggplant (s), or large zucchini
- 4 slices cheese
- salt and pepper
- 2 egg (s)
- Flour
- olive oil

- Cut the vegetables into thin slices, place a piece of cheese (cut to the size of the vegetable) between each of the two slices. Season the resulting sandwiches with salt and pepper, turn in a beaten egg and then in flour. Bake in olive oil until golden brown.
