I suggest you prepare an unusual appetizer salad of fried eggplants, tomatoes and pickled crackers, with a spicy dressing of cheese with garlic, herbs and mayonnaise Sdobri “Sour cream Provence”.

Ingredients
Eggplant – 1-2 pcs.
Tomatoes – 2-3 pcs.
Salted cracker – 50 g
Hard cheese – 150 g
Sdobri mayonnaise “Sour cream Provencal” – 100 ml
Garlic – 3 cloves
Fresh dill – 2-3 branches
Fresh parsley – 2-3 sprigs
Salt to taste
Vegetable oil for frying – 40 ml
Directions
Cut the eggplants into slices, about 0.5 cm thick, sprinkle with salt. We leave for 15 minutes.
Pour vegetable oil into the pan, heat it up. Fry eggplant slices on both sides until golden brown.
While the fried eggplant is cooling, prepare a salad dressing. Rub the cheese on a grater.
Add Sdobri “Sour cream Provencal” mayonnaise to the grated cheese.
Chop the greens finely. Peel the garlic, grind it on a fine grater or pass it through a press. Mix cheese with mayonnaise, herbs, and garlic. The filling is ready.
Let’s start forming the snack. Put salted crackers on a flat plate.
Put the fried eggplant on the crackers.
Grease the eggplant layer with cooked cheese dressing sauce.
Next, lay out the tomatoes cut them into circles.
Then again a layer of mayonnaise sauce with cheese.
Repeat the layers: eggplant – dressing – tomatoes – dressing.
Layered appetizer salad of eggplant, tomatoes and crackers is ready. We decorate the appetizer at our discretion, for example, fresh herbs.
The eggplant and tomato salad should be slightly soaked. After that, serve a snack of vegetables and crackers to the table.
