Eggplant With Minced Meat in a New Way

A delicious recipe from your favorite products. Eggplant with meatballs and cheese – what else do you need to feed a family at the dinner table! How have I never cooked eggplant with minced meat according to this recipe? .. We really liked it!

Ingredients

  • Eggplant – 3 pcs.
  • Minced meat (I have pork) – 400 g
  • Bulb onions – 1 pc.
  • Fresh hot pepper – 1 pc. (or to taste)
  • Tomatoes – 3 pcs.
  • Hard cheese – 100 g
  • Salt to taste
  • Ground black pepper – to taste
  • Vegetable oil

Directions

  1. We prepare all the necessary products.
    We turn on the oven, let it heat up to 200 degrees.
  2. Everything is prepared very simply.
    Cut the eggplants in half lengthwise and cut the flesh with rhombuses.
    We put the eggplants in a heat-resistant form, salt well (but do not oversalt) and pour over with vegetable oil.

    We send the eggplants to the preheated oven for 20 minutes.
  3. Peel the onion and rub it on a coarse grater.
    Peel one tomato and cut into small cubes.
    Peel and finely chop hot peppers.
    Add onion, chopped tomato, hot pepper, salt, and black pepper to the minced meat. Mix well.
  4. We form small meatballs from minced meat. Fry them quickly in a little oil.
  5. The eggplants are well baked. With a fork, crush the pulp to make the eggplant boats.
  6. We fill the eggplant boats with meatballs.
  7. Grind the remaining tomatoes with an immersion blender. Pour chopped tomatoes over the eggplants with meatballs.

    We send eggplants with meatballs to the oven and bake at 180 degrees for 15 minutes.
  8. Rub the cheese on a coarse grater. Sprinkle with grated cheese 5 minutes before the end of cooking.
