Ingredients

  • 3 kg elderberries
  • 2 liters water, optional (if no juicer is available)
  • 500 g cane suar
  • 2 lemon (s), untreated, the juice it
  • 1 teaspoon cinnamon

Instructions

  1. Wash the elderberries and roughly remove them from the stems with a fork (!). Otherwise the berries give off strong stains of color on the hands. Juice in the juicer.
  2. Alternatively, if you don`t have a juicer: Bring the 2 liters of water to the boil and simmer for about an hour.
  3. Then drain through a sieve and squeeze the berries through a kitchen towel. Then put all the liquid back into the saucepan and stir in the cane sugar. Add the lemon juice and cinnamon. Bring to the boil while stirring and cook for about 5 minutes.
  4. Then fill it into germ-free (boiled) glass bottles and seal them airtight. Store in a dark, cool place. The juice usually lasts for years.
  5. Either enjoy it warmed up as cold medicine or process it as a spritzer, liqueur, etc.
  6. Makes about 4 liters, depending on the yield of the berries.
