Ingredients

  • 500 ml water
  • 2 kg elderberries (elderberry umbels), as much as fit in a 5-6 l pressure cooker
  • possibly sugar

Instructions

  1. Put the water in the bottom of the pressure cooker. Put the sieve insert in. Add the elderberry umbels washed. Juice for 12 minutes from evaporation.
  2. Let the steam off until the button goes down on its own. Open the pressure cooker and squeeze out the cones with a potato masher. Drain the insert separately.
  3. If you want to preserve the juice, simply boil it up again. Add sugar to the spot if you like and let it dissolve. Pour the juice into pasteurized bottles while hot. Turn these 10 minutes upside down and check that the vacuum builds up as it cools down. The juice can easily be stored in the bottles for 1 year when stored in a cool place.
