Ingredients

  • 150 g yourt, whole milk, natural
  • 100 ml syrup, (elderflower syrup)
  • 3 tablespoon powdered sugar
  • some lemon juice
  • 150 ml cream
  • 4 ½ sheets gelatine
  • 250 ml orange juice
  • 0.5 ½ vanilla pod (s), including the pulp
  • 150 g strawberries

Instructions

  1. For the jelly, soak 2.5 sheets of gelatine in cold water.
  2. Heat orange juice with 2 tablespoons of powdered sugar and a little lemon juice, dissolve the squeezed gelatine in it, allow to cool and stir in the vanilla pulp. Divide half of the liquid into four glasses and allow to solidify in the refrigerator.
  3. Clean the strawberries, cut into small pieces and add to the remaining liquid. Do not let it set yet, so do not put it in the refrigerator.
  4. Soak the remaining gelatine for the mousse.
  5. Heat approx. 50 ml of the cream and dissolve the squeezed gelatine in it. Mix the yogurt with the elderflower syrup, the remaining powdered sugar, a little lemon juice and the gelatine.
  6. Whip the rest of the cream and fold into the cream when it starts to set.
  7. Spread the mousse on the solidified jelly and let it gel again in the refrigerator.
  8. Finally, put the jelly with the strawberries on top and let everything set for good.
