Ingredients

  • 6 pepper (s), mixed,
  • 6 tomato (s)
  • 6 onion (s)
  • 500 g chicken (fillet)
  • 6 tablespoon marinade for chicken wings *
  • 1 can corn, or frozen
  • 12 tortilla (s) (corn flatbread)
  • some oil for the pan
  • possibly sauce, (garlic sauce made from sour cream)

Instructions

  1. Cut the chicken fillet into cubes and place in the marinade for chicken wings, * to be found in my recipes.
  2. Wash and clean the peppers and cut into strips. Do the same with the tomatoes and onions.
  3. Let the oil get hot in a high pan, fry the marinated chicken, lift out the meat and keep warm.
  4. In the same pan, roast the onions, add the peppers and tomatoes and fry briefly. Pour in water, add the meat and corn and simmer gently for about 15 minutes. Season with marinade if necessary.
  5. Heat the tortillias and fill them with the chicken sauce. Pour some garlic sauce over the enchiladas to serve.
