Ingredients

  • 4 slices ham, smoked
  • 4 egg (s)
  • 1 can beans, baked in tomato sauce
  • 1 tablespoon honey
  • 2 large mushrooms, thinly sliced
  • 6 cocktail tomatoes, quartered
  • 1 bunch chives
  • 4 slices toast bread (butter toast)
  • butter
  • 1 onion (s), diced
  • salt and pepper
  • nutmeg

Instructions

  1. First, beat the eggs (I always do this in a food processor to make them nice and airy). Melt some of the butter in a large pan. Put the ham in it and drizzle with honey, fold the ham slices in the middle. Wait until the ham is a little crispy or the honey is nicely caramelized in the pan. Then take the ham out of the pan and keep it warm. Fry the mushrooms as well as the diced onions and the quartered cocktail tomatoes in the pan (add a little butter if necessary). Heat the beans in a saucepan with a piece of butter. Be careful not to let it burn! Then add the scrambled eggs to the pan and let them harden while stirring constantly. Personally, I like it when it`s not completely hard, but a little juicy. Fry the toast slices in a pan with butter and, if necessary, a little salt. Serve the scrambled eggs on a plate and garnish with chopped chives. Add a dollop of beans and the ham pieces on top. Serve with the toast.
