Directions
Beat an egg into warm water and stir.
Separately mix flour with yeast, salt, and sugar. Add diced chilled butter and stir. Pour the egg into the flour mixture and knead the dough. Cover it with a towel and let sit for 1 hour.
Sprinkle flour on a work surface and roll out the dough into a rectangle about 0.5 cm high. Now fold inward first the side edges of the dough and then the top and bottom. Wrap the dough in foil and refrigerate for half an hour.
Roll out the dough again on a floured surface and cut out small strips about 12 cm long. Cut each of them lengthwise, on one side not reaching the edge. Twist the dough halves together and squeeze the ends. Cover the future donuts with a towel and leave for 45 minutes.
Heat oil to 170 ° C and dip donuts in it. Fry them on both sides until golden brown, then place them on a napkin or paper towel.
Mix the icing sugar and lemon juice and coat the donuts with the resulting icing.
