Ingredients

  • 4 large carrot (s)
  • 4 large potatoes for salad
  • 1 cup peas, cooked
  • Parsley, chopped
  • salt

For the marinade: (mayonesa de zanahoria)

  • 0.5 kg ½ carrot (s)
  • 1 lemon (s), add the juice
  • 4 cloves garlic
  • 2 tablespoon olive oil
  • Salt, to taste

Instructions

  1. Mayonesa de Zanahoria:
  2. Boil the carrots and remove them from the water. Set the cooking water aside. Puree the carrots with the other ingredients and bring to the desired consistency with the cooking water.
  3. Salad:
  4. Cut the boiled carrots and boiled potatoes into small cubes. Mix these with the mayonnaise and season with salt. Let the salad stand for at least an hour.
