Fajitas with Chicken on a Baking Sheet

The Mexican appetizer fajitas differ from similar burritos or tacos in that all the fillings are placed separately on the table and the guest himself puts whatever he wants on the tortilla. This is a great solution if you have a house party and you don’t have much time to prepare your treats. Gather everyone at a table centered around guacamole, sour cream, grated cheese, sauces, salsa, and a large baking sheet with oven-fried bell peppers and chicken. It will take you no more than half an hour to prepare such a dish. And then to quickly finish with dirty dishes, first cover the baking sheet with foil.

Ingredients

• 1 tbsp chili powder
• 450 gr. small sweet peppers (12-15 pcs.), cut in half, and peeled of stalks and seeds
• 1 large onion, cut into thin half-rings
• 2 tbsp olive oil
• 0.7 kg. skinless and boneless chicken breasts
• Juice of 1 lime + lime wedges for serving
• 8 wheat tortillas for fajitas, preheated
• Grated cheese, guacamole, hot sauce, salsa, and sour cream, for serving

Directions

1. Preheat oven to high on grill setting. Line a baking sheet with foil.
2. In a small bowl, combine the chili powder, 2 teaspoon. salt and 1 teaspoon. pepper. Place the peppers and onions on the prepared baking sheet, drizzle with 1 tbsp olive oil and sprinkle with half the chili powder mixture. Roast in the oven until soft, until the vegetables begin to char, about 10 minutes.
3. In the meantime, cut the chicken into 1/2-inch chunks and combine in a large bowl with the remaining chili powder and 1 tbsp olive oil.
4. After the peppers have softened and roasted for about 10 minutes, spread the chicken over the peppers and onions and return the baking sheet to the oven. Cook until the chicken is cooked through and begins to brown, about 5 minutes more. Drizzle with lime juice.
5. Serve fajitas with warm tortillas, grated cheese, guacamole, hot sauce, salsa, sour cream, and lime wedges.
