Ingredients

  • 400 g bacon, smoked
  • 20 g butter
  • 1 onion (s), chopped
  • 3 carrot (s)
  • 1 celeriac
  • 4 potato (s)
  • 3 leeks
  • 2 liters broth, made from cubes
  • 1 small Can (s) mushrooms, mixed or chanterelles
  • Potato flour, for binding
  • marjoram
  • 1 egg (s), including the yolk
  • 2 tablespoon heavy cream
  • 1 bunch parsley, chopped
  • Bread (e), (farmer`s bread), diced, toasted in butter
  • salt and pepper
  • nutmeg
  • garlic

Instructions

  1. Dice the smoked bacon. Leave out with butter. Add onion and brown until golden. Wash, peel and dice the carrots, celery tuber and potatoes. Cut the washed leek into fine strips. Braise the vegetables in fat. Top up with broth. Boil for 15 minutes, add mushrooms, stir potato powder into the broth, bring to the boil. Season well with marjoram, pepper, salt, nutmeg and garlic powder. Alloy with egg yolk, i.e. whisk the egg yolk and cream together, stir into the soup. Fold in chopped parsley. Before serving, sprinkle bread cubes roasted in butter over the soup.
