Festive Potato Roll with Mushrooms

Ingredients

  • Potatoes – 11 pcs.
  • Champignons – 250 g
  • Starch – 3 tbsp
  • Bulb onions – 1 pc.
  • Carrots – 1 pc.
  • Semolina – 1 tbsp
  • Salt to taste
  • Pepper to taste
  • Vegetable oil – for frying and for greasing dough
  • Spices to taste
  • Green onion – 2-3 feathers

Directions

  1. We prepare the ingredients for a potato roll with mushrooms.
  2. Cook peeled potatoes for 25 minutes in salted water until tender. Using the “crush”, knead the potatoes into a soft, lump-free puree. Add starch.
  3. Cut the onion into half rings. Shred the washed mushrooms with random, not thick pieces. Rub the carrots on a coarse grater.
  4. First, fry the onion in vegetable oil, then add the carrots. Cook vegetables for 10 minutes. Add mushrooms to vegetables, salt, and pepper. We fry everything together for another 15 minutes. Add semolina to the finished filling.
  5. Cover the baking sheet with parchment paper, grease it with vegetable oil, and spread the potato dough about 1 cm thick. Sprinkle the dough with salt and spices to taste.
  6. Put the filling on the dough, not reaching the edges of 1 cm. Sprinkle the filling with finely chopped green onions.
  7. We wrap the roll with parchment. We twist the roll very quickly so that the dough does not have time to cool down, as it will break when cold.
  8. If desired, sprinkle the top of the roll with your favorite spices. Cooking potato roll with mushrooms in the oven for 20 minutes at a temperature of 200 degrees.
  9. The potato roll with mushrooms is ready. Cut the finished potato roll with mushrooms into portioned pieces. Decorate with green onion feathers.
