Ingredients

  • 800 g turkey breast
  • 500 g paprika, red
  • 200 g sprin onion (s)
  • 200 g carrot (s)
  • 1 jar bamboo shoot (s), 80 g
  • 250 ml chicken broth
  • 1 can coconut milk, 400 ml
  • 5 tablespoon soy sauce
  • 1 tablespoon lemon juice
  • garlic
  • salt
  • Black pepper
  • ginger
  • Harissa
  • turmeric
  • Cashew nuts
  • Sesame oil for frying

Instructions

  1. Cut the turkey breast into cubes and season well, peel and press the garlic. Sear both together in sesame oil. Deglaze with the chicken stock and add the chopped vegetables. Cook over medium heat for about 10 minutes. The vegetables shouldn`t get too soft.
  2. Then add the bamboo shoots and coconut milk. Season to taste with soy sauce and lemon juice. If the sauce is too thin, you can thicken it a little.
  3. Sprinkle some cashweed seeds on top before serving.
  4. Rice and a salad are ideal as a side dish.
