Ingredients

  • 1 egg (s)
  • 50 ml buttermilk
  • 1 teaspoon Baking powder
  • salt
  • cinnamon
  • 40 g flour (dark wheat flour)
  • 2 fig (s), fresh
  • 2 teaspoons maple syrup, up to 4

Instructions

  1. Separate the egg, whisk the yolks and buttermilk together. Mix the baking powder, salt, cinnamon and flour and stir with the buttermilk. Beat the egg whites very stiff and fold into the dough.
  2. Rinse the figs, rub dry and cut into slices. Heat a coated pan without additional fat. Put a little batter into the pan for each pancake, place a slice of fig on top, bake on both sides.
  3. Drizzle with maple syrup and serve.
