- 750 g potato (s)
- 1 large carrot (s)
- 0.5 ½ onion (s), red
- 1 ½ liter vegetable stock
- Salt and pepper from the mill
- marjoram
- Herbs, mixed, your choice
- 1 clove garlic
- some oil
- 2 Debrecziner sausages

- Peel the potatoes and cut 2/3 of them into large cubes. Cut the remaining potatoes into fine, bite-sized cubes and set aside in a container with water.
- Peel the carrot. Cut 2/3 of the carrot into larger pieces. Slice the rest of the carrot on the vegetable slicer into very fine leaves and set aside.
- Roughly dice the onion.
- Heat some oil in a tall saucepan. Briefly sauté the onions together with the roughly chopped potatoes and carrots and season with pepper and marjoram. Now fill up with approx. 750 ml vegetable stock and simmer until the potatoes and carrots are soft.
- If this is the case, take the pot off the hob and puree everything well. Then put it back on the hob and pour in enough of the remaining vegetable stock until the desired consistency is reached. Bring to the boil briefly and reduce the temperature.
- Now add the small potato cubes and the carrot slices to the soup and let them steep until the potatoes are soft. Add some herb mixture and a pressed clove of garlic. Shortly before the end of the cooking time, add the chopped Debrecziner sausages and let them steep. Salt a little if necessary.
- Tip: If you want, you can also add some cream.
- Serve the soup hot.
- A piece of fresh bread goes particularly well with it.
