  • 12 Yufka pastry sheets, triangular
  • 2 apples, sour
  • 2 onion (s), red
  • 100 g Kat ham, finely diced
  • 2 egg (s)
  • 150 g crème fraîche
  • 150 g cream
  • 1 teaspoon thyme, dried
  • pepper
  • salt
  • nutmeg
  • 2 tablespoon butter for frying
  • some oil to grease the form

  • some cheese, spicy (Gorgonzola, goat or mountain cheese)

Instructions

  1. You need a 24-cup mini muffin tray.
  2. Peel the apples and onions and cut into small cubes. Preheat the oven to 180 ° C.
  3. Sauté the ham, onion and apple cubes in the butter over medium heat until the onions are translucent. Season with pepper and thyme.
  4. Mix the eggs with the crème fraîche and the cream, season with freshly grated nutmeg, a little salt, pepper and, if you like it a little hotter, a little chili. Be careful with the salt as the ham is salty too.
  5. Brush the yufka dough sheets with water - I use my fingers to do this - so that they don`t break and cut into smaller triangles. So that the lightly oiled hollows of the mini muffin tray line.
  6. Now pour about 1 teaspoon of the ham, apple and onion mixture into each well and drizzle about 2 - 3 teaspoons of the egg and cream mixture over it. If you like, you can also add a small cube of spicy cheese, e.g., Gorgonzola, goat or mountain cheese, on top.
  7. Put in the oven and bake for about 25 minutes, until the egg mixture is firm and the dough is light golden brown.
