Instructions

  1. Carefully debone the fish, then cut into bite-sized pieces. Spread the flour on a plate, roll the pieces of fish in it, knock off lightly. Then pull through the lightly beaten egg yolk, then through the breadcrumbs (you could well season with fresh herbs, so rosemary, thyme or sage , but it doesn`t have to be).
  2. Meanwhile, froth the butter in the hot pan, add the pieces of fish, fry them until golden, add a little salt and a little white pepper.
