Ingredients

  • 250 g rice
  • salt and pepper
  • 2 bell peppers, red and yellow
  • 1 onion (s)
  • 150 g bean sprouts or mun bean
  • 600 g fish fillet (s), (e.. cod)
  • 1 tablespoon oil
  • 150 g peas, frozen
  • 375 ml vegetable stock
  • 2 tablespoon soy sauce, (up to 3 )
  • 2 tablespoon mango chutney (or apricot jam)
  • 1 teaspoon cornstarch, (up to 2 s)
  • 0.5 teaspoon ½ sambal oelek, (more if you like)

Instructions

  1. Put the rice in a good ½ liter of boiling salted water and cover and let soak for about 20 minutes over a low heat. Clean the peppers and cut into fine strips. Finely dice the onion. Rinse and drain the seedlings. Pat the fish dry and cut into cubes. Salt and pepper.
  2. Heat the oil and fry the fish cubes until golden brown. Remove and set aside. Braise the onion in the frying fat. Add paprika and peas and sauté for about 3 minutes. Deglaze with 375 ml of vegetable stock. Stir in the soy sauce and mango chutney and simmer for about 3 minutes. Mix the starch with 2 tablespoons of water until smooth and thicken the sauce with it. Season to taste with salt and sambal oelek. Heat the fish cubes and seedlings in it. Serve with rice.
