Fish with Tomatoes, in the Oven

A delicious recipe for fish baked with tomatoes, Mediterranean style.

Ingredients

  • Fish fillet – 700-800 g
  • Onions – 400-500 g
  • Cream tomatoes – 1-1.2 kg
  • Garlic – 3-4 cloves
  • Lemon – 1/2 pc.
  • Vegetable oil – for frying + for greasing the mold
  • Salt to taste
  • Freshly ground black pepper – to taste
  • Sugar – 1 teaspoon
  • Paprika – 1 teaspoon
  • Cinnamon – 1/4 teaspoon
  • Tomato paste – 1 tablespoon
  • Dry white wine – 1/2 cup
  • Parsley – 1 bunch

How to cook baked fish with tomatoes:

Directions

  1. Grease a baking dish with vegetable oil. Layout the fish fillets. Sprinkle with lemon juice, salt, and pepper.
  2. Dip the pomidors in boiling water.
  3. Remove the tomatoes from the water, remove the skins, and remove the seeds. Cut the tomato pulp into small pieces.
  4. Chop the onion coarsely. Finely chop the garlic.
  5. Heat vegetable oil in a frying pan and fry the onion until transparent. Add garlic. Fry for another minute.
  6. Add pomidors. Season with salt and simmer without a lid over medium heat for 10-12 minutes.
  7. Add paprika, cinnamon, sugar, tomato paste. Spice up.
  8. Add wine and stir. Simmer over medium heat for about 10 minutes.
  9. Add parsley leaves, stir.
  10. Put the mixture on the fish.
  11. Preheat oven to 190 degrees. Bake fish and tomatoes for 35-40 minutes.
  12. The fish baked with tomatoes is ready. Serve with boiled rice.
