  • Any fish, boneless (fillet or steak) – 300 g
  • Eggplant – 1 pc.
  • Bulgarian red pepper – 1 pc.
  • Bulgarian yellow pepper – 1 pc.
  • Bulb onions – 1 pc.
  • Garlic – 2 cloves
  • Fresh thyme – 1 sprig
  • Salt to taste
  • Ground black pepper – to taste
  • Vegetable oil – for frying vegetables

  1. Prepare the required ingredients. Any fish without bones cut into fillets or steaks is suitable for baking in an “envelope”. I used a cod steak.
  2. Peel the onions and cut them into small cubes.
  3. Peel the multi-colored bell peppers, cut into small cubes.
  4. Also, cut the eggplant into small cubes.
  5. Fry the onion in vegetable oil until transparent, season with salt and pepper.
  6. Add bell peppers to the onion. Fry for 5 minutes.
  7. Then add the eggplant and fry the vegetables together for another 5 minutes.
  8. Finally, add chopped garlic to the vegetables.
  9. Spread out a sheet of foil. Spread parchment of the same size over the foil. Put half of the fried vegetables on the parchment. Put fish on the vegetables, salt, and pepper to taste.
  10. Arrange the remaining vegetables on top, add a sprig of thyme for flavor.

  11. First, fold the foil and parchment with an overlap, then twist the edges. Put the resulting envelope with fish and vegetables on a baking sheet and send to the oven, preheated to 200 degrees. Bake fish (cod steak) with vegetables in parchment and foil in the oven for about 20 minutes (baking time depends on the size of the fish).

  12. Transfer the envelope to a plate, carefully unfold the foil and parchment. Serve baked fish and vegetables directly in this envelope.
