Ingredients

  • 800 g potato (s)
  • 200 g crabs
  • 50 g ham, diced
  • 1 onion (s)
  • 4 egg (s)
  • 8 small cucumber (s), sweet and sour pickled
  • 1 tablespoon clarified butter
  • 1 tablespoon olive oil
  • salt and pepper
  • 1 bunch chives, cut into rolls

Instructions

  1. Peel the potatoes and cut into small cubes. Onion very finely diced. Fry the potatoes in the clarified butter and olive oil mixture over a low heat. Turn every now and then. Add the onion cubes about 15 minutes before the end of the cooking time.
  2. Fry the ham cubes in a second pan over a medium heat until crispy, pour onto kitchen paper and dab off the excess fat. Add to the potatoes just before the end of the cooking time and mix in.
  3. Put the crabs on the plates, place the fried potatoes next to them, put on the gherkins and place the fried eggs on top of the potatoes. Sprinkle everything with chives.
