Mix oat flakes, coconut flakes, protein powder, baking powder well. Add enough water to make a viscous dough (a good shot).
Spread in a square shape on a baking sheet and bake for about 18 minutes. It should be a little more brown at the edge, otherwise the dough must be firm, but not too baked, otherwise you can no longer roll it.
In the meantime, cut the pineapple into pieces and stir into the quark. If you want, you can mix coconut flakes with the pineapple quark cream.
Take the finished dough out of the oven and let it cool down for a short time (2 minutes). Then spread the cream on the dough. Leave a little space at the end so that you can roll it up into a roll. It will leak cream, but if you already do this on your plate, that`s not bad at all.
Decorate with slices of half a banana and a few more coconut flakes. Your healthy, holiday-ready breakfast is ready.
