Ingredients

  • 2 apples
  • 1 tablespoon lemon juice
  • 3 egg (s)
  • 80 g flour (whole rain)
  • 1 packet baking powder
  • 120 g cane suar
  • 125 g nuts, round, Almonds, hazelnuts, walnuts or mixed
  • 0.5 ½ lemon (s), untreated
  • 10 g iner root
  • 200 g quark, 20% fat
  • 2 tablespoon applesauce
  • 75 ml whipped cream

Instructions

  1. Peel and grate the apples. Then drizzle with lemon juice so that they don`t turn brown.
  2. Mix the flour and baking powder together and separate the eggs. Beat the egg whites until stiff and chill. Beat the sugar and egg yolks with the whisk until frothy. Mix the apples, nuts and the flour mixture with the sugar and egg yolk mixture, fold in the egg white.
  3. Pour the dough into a springform pan (Ø 22 cm) lined with baking paper. Bake in the preheated oven for about 30 minutes at 180 °.

  5. Rip off the lemon peel with a coarse grater and squeeze the lemon. Peel the ginger and grate finely. Mix the quark with the applesauce, ginger and lemon zest. Season to taste with lemon juice. Whip the cream until stiff and fold in. Spread on the cake just before serving.
  6. You can use more lemon peel or lemon halves as decoration.
  7. If you use almonds, this cake has about 2440 kcal and 127 g of fat. With 12 pieces this corresponds to 203 kcal / 11 g fat per serving.
